Quinoa Salad (original recipe link below)

Using the aforementioned recipe as a jumping off point, I followed the directions as listed but used the following ingredients instead for a light, refreshing and simple tasting dish:

1 cup Quinoa
3 cups water
Salt to taste
2 cups diced cucumber
1 small onion (or 1/2 medium onion) (finely minced)
2 cups diced tomatoes
1/2 cup cilantro
2 Tbsp lime juice
1 Tbsp apple cider vinegar
3 Tbsp extra virgin olive oil
